INGREDIENTS:
· 2 (15 oz) cans black beans, drained and rinsed
· 1 (15 oz) can yellow corn, drained
· 1 (15 oz) can white corn, drained
· 1 (14.5 oz) can Italian-style diced tomatoes, drained
· 1 bunch of finely chopped fresh cilantro
· 1 red bell pepper, finely chopped
· 5 green onions, chopped
· 1 medium red onion, chopped
· 1 tablespoon minced garlic
· 1 avocado, peeled, pitted and diced
· 2 tablespoons extra virgin olive oil
· ¼ cup lemon juice
· ½ teaspoon kosher salt, plus more to taste
INSTRUCTIONS:
